A hidden French bistro in Hanoi

        Since opening in 2019, Fabrik Bistro has been built around a simple idea: bringing familiar flavours from France and the Mediterranean to Hanoi, in a warm and unpretentious setting.

Fabrik was created in the spirit of a French bistro — relaxed, welcoming and focused on good food, good drinks and genuine hospitality. Rather than making dining feel formal or complicated, we want guests to feel comfortable from the moment they arrive.

At the heart of Fabrik is Chef Olivier Genique, a Master Chef of France and Vice President of the International chefs' association Disciples of Escoffier in the Nord of Vietnam.

       Chef Olivier has more than 20 years of experience in restaurants and luxury hotels across France and Europe. His professional journey also includes six years working in the kitchen of the Sofitel Legend Metropole Hanoi, one of the city’s renowned five-star hotels.

His experience has shaped the way Fabrik approaches food: careful preparation, balanced flavours and attention to detail, while keeping the experience warm and approachable.

For Chef Olivier, cooking is not about unnecessary complexity. It is about understanding the ingredients, preparing them properly and allowing the character of each dish to come through.

        The philosophy behind Fabrik is simple: "Sell with kindness. Preserve the flavour. Serve with dedication."

These three ideas guide both the kitchen and the dining room. We believe that good food begins with care. Flavour should be balanced and true to the character of the dish, while service should be attentive without feeling formal or intrusive.

         Located at 16 Trấn Vũ, Ba Đình, Hanoi, Fabrik is conveniently situated near several of the city’s attractions. The location welcomes both travellers exploring Hanoi and local guests looking for a relaxed place to enjoy a meal, a glass of wine or an evening with friends.
